A bowl FULL of comforting good stuff – The warming spiced veggies are perfectly matched with the creamy houmous. Easy to eat with a fork and a crusty slice of sourdough in a bowl for you.. or this also makes a rather impressive centre piece to any BBQ table too.

This Recipe Serves 2 People | 3 Portions of Veg Per Serving | Ready in 30 Minutes


To make this recipe you will need:

1 Large Red Onion

1 Large Courgette

2 Bell Peppers (any colour works well)

6 Salad Tomatoes

1 Teaspoon Garlic Granules

1/2 Teaspoon Cracked Black Pepper

1 Heaped Teaspoon of Smoked Paprika

To Serve:

500g Houmous (We like to use Ramona’s if I don’t have my homemade houmous in the fridge)

Toasted Sourdough Slices

A sprinkle of omega 3 seeds


How to do it:

Peel and chop your onion, courgette, pepper and tomatoes into 1 inch sized pieces, pop into an oven proof dish with the garlic, black pepper, paprika and a drizzle of oil. Oven bake at 200℃ for about 20 minutes (until the veggies are cooked through.)

When your veggies are nearly cooked, toast your sourdough ready for serving.

Prepare your bowls by evenly distributing the houmous in each persons bowl, smear around the outer edges with a space in the centre for the roasted veg. Serve with a sprinkle of seeds and your hot toasted sourdough on the side.

*Want make this gluten free? Use a gluten free bread in place of the sourdough – I like the Schar Brown Ciabatta rolls, sliced in half and toasted.
