The perfect meal for when you fancy a comfort food option but don’t want to spend a fortune.. We often have these giant naan breads in the cupboard, ready to whip up an easy flavour packed dinner after a long day. You can also use smaller naan breads or other flat breads for this recipe.. or, if your have more time, why not make your own pizza dough?
This Recipe Serves 2 People | 2 Portions of Veg Per Serving | Ready in 15 Minutes
To make this recipe you will need:
1 Large Flatbread per person
60g of Tomato Puree
1/2 Teaspoon Dried Oregano
A Red Onion (finely sliced)
2-3 Large Flat Mushrooms (peeled)
A Splash of Henderson’s
1/4 Teaspoon of Cracked Black Pepper
1/4 Teaspoon of Garlic Granules
2 Heaped Tablespoons of Tomato Chutney Sauce (you can switch this for a tangy burger relish too if needed)
2 Tablespoons of Dairy Free Cream Cheeze (The garlic and herb ‘free from’ cream cheeze from Morrison’s is a really good option.)
To Serve:
Fresh Rocket, watercress, pea shoots or other microgreens
A sprinkle of black pepper
How to do it:
Pre-heat the oven to 200℃ before preparing your pizzas, they will bake best if they go straight into a hot oven.
Now, lay the flat breads onto baking trays. To make the pizza sauce, add a splash of hot water into your tomato puree to loosen it up. Mix in the dried oregano before evenly spreading the pizza sauce over the surface of each bread.
Finley slice your peeled mushroom and pop into a pan with the garlic granules, black pepper, Henderson’s and a splash of oil. stir fry for a few minutes to just allow the mushrooms to soak up the flavours – Remember, the mushrooms don’t need to be fully cooked through at this stage as they will finish off in the oven.
When your mushrooms are done, spread evenly across your pizza bases with your sliced red onion. Add the tomato chutney sauce and cream cheeze in small dollops over each pizza and then pop into your hot oven for
10-12 minutes (or until the cream cheeze has melted and is starting to bubble.)
Prepare your salad whilst your pizzas are baking – To serve, add a sprinkle of pepper.
*Want to make this gluten free? I recommend these pizza bases from Schar – They are far better than most I have tried as they don’t turn into a rock hard inedible piece of wood when baked!
