Once you have had this homemade slaw you are VERY unlikely to ever look at the sloppy store bought option in the same way ever again! Easy to whip up in less than 10 minutes and a good option to get the kids helping in the kitchen to encourage them to eat more veggies too.
This Recipe Serves 4 People | 2 Portions of Veg Per Serving | Ready in 10 Minutes
To make this recipe you will need:
2 Large Carrots (washed)
1 Small-medium Red or white Onion (peeled)
1 Large Courgette
1 Teaspoon of Dill Tips
3 Tablespoons of Vegan Mayo
How to do it:
Chop the very end off your washed carrots and courgette. Then use a box grater to fully shred your veggies into a large bowl or tub. Next, peel and finely slice the onion into thin strands before adding into the grated veg.
Add the dill tips and vegan mayo. Stir well to fully distribute the finely grated veggies in among the creamy mayo and herbs.
Store in an airtight tub in the fridge for up to 4 days – Best served on the side of a salad, with a burger, in a hot jacket potato or in sandwiches for a yummy plant based crunch.
*Want to make this without mayo? Switch the vegan mayo for 2 heaped tablespoons of tahini whisked with a splash of lemon juice and 50mls of boiling water.
